A great way to support the environment is to eat seasonal produce and purchase locally.
How many nights in a row can you eat a baked potato or squishy carrots...
with this recipe - the kids will be begging for root vegetables every night...

Rainbow French Fries

 Organic Ingredients:

Carrots
Yellow Potatoes
Purple Potatoes
Golden Beets
Parsnips
Olive Oil
Thyme
Sea Salt

1. Preheat oven to 400F

2. Peel root vegetables and slice into french fry looking sticks

3. In a bowl lightly coat vegetable sticks with olive oil 

4. Sprinkle thyme  over vegetables and mix thoroughly so all sticks are coated

5. Spread on a cookie sheet

6. Bake for 10 minutes then turn the veggie sticks over

7. Bake for 10 more minutes, turn veggies over again

8. Bake for 4-8 more minutes until golden in colour and soft when poked with a fork

9. Ready to serve with a dash of sea salt or organic ketchup
